Ginger: Food & Medicine

how to peel ginger

how to peel gingerhow to peel gingerFresh ginger is that minimal but potent ingredient in really fresh, delicious recipes. Knowing an easy trick to peeling it can make it a lot more accessible. I learned this trick in a cooking class we took with Chris’ family on a Caribbean cruise. Our chef just had us peel off the skin by scraping it with a spoon!

It was brilliant. I had spent years whittling down huge chunks of ginger into little nubs that would then be chopped. I would purposely buy large pieces when I knew I only needed a tablespoon.

This technique preserves 99% of the ginger root! Yay! When preparing a stir fry, simmer some ginger with garlic in a bit of oil to flavor an entire dish. It pairs well with garlic and soy sauce.

Ginger is a beautiful medicinal as well. Ginger has a very warming property that aids in soothing digestion. When I say “warming” I don’t mean thermostat kind of heat. I mean the property of an herb as far as what it does to the body. In this case, the warm ginger activates and soothes the digestion.

It is used by pregnant women and those with seasickness to calm nausea. You can put a couple of slices into warm water to calm an uneasy stomach. When you add it to a recipe it can balance out the “cold” nature of other ingredients. An example of this would be adding it to a green juice. Cold, raw vegetables can be harsh on the digestive system. Warming ginger will balance it out.

In Traditional Chinese Medicine (I’m an acupuncturist as well as an herbalist) we use it in many herbal formulas for digestive health and temperature balance.

I love ginger and I use it whenever I have a cold. I boil it and after it cools down I add lemon in the water and drink it. It is so good for a sore throat. The trick with the spoon is new to me…thank you for that!

I learned this trick from some show on The Food Network. Maybe it was Barefoot Contessa. It is definitely a brilliant tip.

I had to simplify weight loss because I have so many other things I want to pour my energy into!

You see me doing a million things but I’m actually impatient and lazy. I’m a Taurus who loves to lounge and eat donuts.

I found a way to eat donuts, lose weight and do it with the least effort.

The food is easy. The prep is easy. I don’t even think about it anymore.

I started my journey in the summer and it was the best life upgrade of the year.

All possibilities are equally available at all times.

There have been times when I thought gosh how did I get into this situation?

I had to remind myself that I could get myself out of it.

I had to remind myself that I had the power to create the life that I wanted.

I hope there’s something that you want that you’ve decided to experience for yourself.

Not someday or if this or if that.

1. Tying my worthiness to outcomes- at the end of each day I focus on how the day felt, over what got done.

There are days when I am a super DOER and I also have heartburn.

I want less days like that and more days that feel peaceful regardless of the list.

2. Earning rest-If I feel like eating donuts and sleeping on the sofa all Saturday morning, that’s awesome. Don’t need permission and don’t need to apologize-just enjoy.

3. Saying “I should”- That’s a 100% red flag for something I SHOULDN’T do.

That’s a signal that it’s something that someone else says I should be doing-not my inner authority.

4. Needing things to be hard- I say things like “Show me how easy this gets to be,” (and I believe it). The proof presents itself.

It’s so frustrating to feel like you can’t improve It’s so frustrating to feel like you can’t improve your life. You feel like you need more- money, creativity, luck.

That’s actually not true though.

When I fall into this trap, I do this…

Here’s the trick.

When you ask yourself “why is this so hard” your brain goes to work finding every reason it is.

BUT when you ask “why is this so easy for me?” “Why is it all falling into place?”

Your brain has to find proof of that instead.

Different question. A completely different experience.

Keep asking that question all day! Stop asking “Is it working?” Just do it!

Try it on your house. Your body. Anything you’ve been stuck on and tell me what happens!

How many times was I going to send this listing to How many times was I going to send this listing to my friend and my husband, asking if it’s worth a 45 minute drive to go pick this up?

If I waited any longer, it was going to be gone.

But what if that was a sign that it wasn’t for me?

where was my sign from the universe?

I just knew this was going to give our family room the cozy vibe I wanted.

Everything else in the room was new so it needed something to feel warmer, unexpected, collected and personal.

I kept holding the phone up to the couch trying to picture it.

It belonged here.

She was asking $100 and I asked if $80 would be ok. It was deal and we were off on a long trip, deep into the city.

Was this going straight to Goodwill?

She put the cutest note on top and her roommate helped up load it into our truck.

I dumped a bunch of water on it and gave it a good scrub plus some scraping off of candle wax. No problem!

Truly, what’s meant for you will never pass you by.

When you search and shop with that vibe, all the right stuff will arrive in your feed and you’ll get the perfect piece.

No kidding, within a day of DECIDING my coffee table was going to be on Marketplace, it showed up.
