Meat Loafies
- 1 lb. ground turkey (choose one with some fat)
- 1 cup bread crumbs (use one of these: traditional, panko, or almond meal (ground almonds))
- 2 eggs
- 2 tbsp soy sauce
- 2 tbsp ketchup
- olive oil (for cooking in pan)
In a bowl, combine bread crumbs, eggs, soy sauce and ketchup.
Add uncooked ground turkey to the bowl and gently fold it into the mixture.
Heat olive oil in a large pan (or 2 pans to cut down your cooking time) over medium/low heat. I use stainless steel pans so I have to use some fat for all cooking. I use a couple tablespoons of oil per pan.
With slightly damp hands, roll little balls of the mixture and flatten to create your mini meat loafies.
Cook patties for about 4 minutes on each side and flip when halfway cooked through.
I’m always looking for healthy recipes my kids will love! These meat loafies are crowd pleasers, kids and adults alike. They also keep well in the fridge so its easy to grab these as an easy snack, lunch item or reheated for another meal.
The name for these comes from my days in the Navy when I worked with a lot of pilots. Pilots have cool call signs or nicknames. One colleague’s last name was MEAT and his call sign was “Loafy.” It always cracked me up so I gave this cute name to one of our favorite meals.
