GF Almond Coconut Chocolate Chip Pancakes

GF pancakes

These pretty much made our week here. Almond flour is my new power animal. These can be GF or not (just use regular flour). This is adapted from the back of the Trader Joe’s GF Flour bag. I added, subbed and twirled in some goodness.

GF Almond Coconut Chocolate Chip Panckes

 

Ingredients:

1 cup GF flour (or any other flour)

2/3 cup almond meal

3 teaspoons brown sugar

1 tsp baking powder

1/4 tsp salt

1 cup water

2 eggs beaten

1/4 cup coconut oil

1/2 tsp vanilla extract

As many chocolate chips/cocoa nibs you can handle (I used Ghiradelli-sinful)

Combine the flour, almond meal, brown sugar, baking powder and salt in one bowl. In another bowl, combine the water, eggs, vanilla and coconut oil. You want the eggs and the coconut oil to be similar in temperature. To achieve this, you may have to heat the coconut oil (microwave or stovetop) for a bit so it doesn’t turn solid once it hits cold eggs. If it gets a little chunky from the coconut oil solidifying, no worries, just combine as best you can and it will melt/mix in the pan. 

Add wet ingredients to dry ingredients. Stir in chocolate chips.

This is a very thin batter. Using some coconut oil to coat a small pan, fill the pan with a thin layer of batter to make one big pancake and cook each side until browned. I cut them into quarters. I made ours medium thickness and big so it made 3 large pancakes (12 quarters).

We totally ate a whole big one a piece though!!! AH!

These are so flavorful, there really isn’t a need for syrup! Enjoy and let me know about any modifications.

    I just went gluten free so I love to know that TJ’s has GF products and I can’t wait to try this recipe, looks yummy!

      Oh cool, Michele! I think anyone could appreciate this recipe. TJ’s gluten free brownies are kind of the bomb too! Another favorite GF mix is anything by a company called Pamela’s. Thank you!

      Oh she will LOVE this, Jenn! You can sub out the oil for another oil but the coconut flavor is mild and delicious.

    Ummm YUM! I might actually try these tomorrow. My husband only eats pancakes with chocolate tips in them. And these are GF, so healthy, right? 🙂

      Yay! GF is not necessarily “healthy.” Only because in this case there is sugar and chocolate. BUT coconut oil has many wonderful health benefits (http://www.doctoroz.com/videos/surprising-health-benefits-coconut-oil). Almond meal is a great way to add a non-grain healthy alternative. GF recipes are great for those who deal with inflammatory responses to gluten. So it’s great to replace “regular” ingredients for ones that pack a more healthful punch! ENJOY!

    Almond Joys are one of my favorite candies… and this looks like a delicious healthy alternative with the same flavor combination going on! How awesome! I want to have breakfast at your house my friend! 🙂

    Oh my these look absolutely delectable and there’s enough going on that you don’t need syrup. I’ve never used almond flour before but I want to pick some up now.

      The almond flour is a must-try in anything! The package says that it can be used to replace up to 50% of a flour ingredient. If you use more, the end result may not hold together well. I’m going to keep experimenting with it. Also, I’m going to try coconut flour next.

      Yay! Just note that they look watery so you just need to let them fill up the whole pan and wait. They end up GREAT but look dodgy at first! Enjoy!!!

How many times was I going to send this listing to How many times was I going to send this listing to my friend and my husband, asking if it’s worth a 45 minute drive to go pick this up?

If I waited any longer, it was going to be gone.

But what if that was a sign that it wasn’t for me?

where was my sign from the universe?

I just knew this was going to give our family room the cozy vibe I wanted. 

Everything else in the room was new so it needed something to feel warmer, unexpected, collected and personal.

I kept holding the phone up to the couch trying to picture it.

It belonged here.

She was asking $100 and I asked if $80 would be ok. It was deal and we were off on a long trip, deep into the city.

Was this going straight to Goodwill?

She put the cutest note on top and her roommate helped up load it into our truck.

I dumped a bunch of water on it and gave it a good scrub plus some scraping off of candle wax. No problem!

Truly, what’s meant for you will never pass you by. 

When you search and shop with that vibe, all the right stuff will arrive in your feed and you’ll get the perfect piece.

No kidding, within a day of DECIDING my coffee table was going to be on Marketplace, it showed up.

I lived with a front door that hurt my eyes to loo I lived with a front door that hurt my eyes to look at, but here’s why that was the best decision.

First of all that kind of glass was giving privacy but really missing out on the beautiful front yard view.

It was also not letting in as much light that it could, which is important for that side of the house because that’s on the sunset side. 

It was a little bit warped from being wood and getting a lot of sun over the years. 

First I had to figure out what the whole aesthetic of the exterior was going to be. I had a vision of a French country home. 

That got me going with colors and then this grid door felt fresh country and was paintable 

Even though I wanted to change that door so so badly for so many years, I painted it to have it blended in with our home war but I’m really so glad I waited because now we have the perfect door for the house 

If there’s something that you don’t like about your home, it’s OK to wait because the right designs some times comes together over over time. 

The trick is having an inner peace and knowing that the perfect solution is out there and will come to you at the perfect time when you’re ready to give it the attention it needs.

It’s like Michelangelo and the David. It was a block of marble and the David was always in there. Your house is the same way.

You have to see it in your mind first before anything can change.

Once I drew out my designs, collected inspo images and stared at this space long enough, I was able to visualize what I wanted.

The next part kind of just happened.

It’s like a moving train.

Once you set your ideas and intention on the train-it just goes.

You just have to decide you want it.

Everything falls into place. Don’t worry about the how.

I can’t believe I considered keeping that little step wall at the bar! 

So happy with how it turned out.

After 6 pregnancies, 4 kids and closing my breastfeeding chapter, I was 45. 

I was feeling so grateful but also started feeling really uncomfortable in my body.

Our youngest was under 2 and still waking at night. How was I going to do this?

I was trying so hard and nothing was working. I would give up and try something different. 

There had to be a way that would work for me, at my age and with my schedule. Something that was simple.

That’s when I learned how to eat in a way that was satisfying. 

I became excited about my meals. They hit my goals with protein and nutrition.

When I live in that frame, I choose to do things that light me up and enjoy life. 

Good things come- family, work, love. 

Then there are times when I got nervous and choose “the right thing.”

But ya know what, everything works out no matter what.

Sometimes leaning into the fears was what I needed so that I could go for what I really wanted.

At 46 I’m still learning to stay in trust, connection, gratitude and detach from my fears.
